As a true Southie (South Indian), I am a rice and curry kind of girl. So when I got an opportunity to write a sponsored post for Minute® Rice, I immediately jumped at it. I have cooked all kinds of rice; you name it and I have cooked them all. But, I never used Minute® Rice before. Most of you who have cooked regular rice will attest to the fact that it takes at least a minimum of 20 minutes to cook it depending upon the type and quantity. However, Minute® Rice’s claim of 5-minute rice was intriguing and tempting so I had to test it out for myself.
For the test, I used Minute® White Rice. On the box it is described as instant, enriched and long grain and can be cooked in the microwave as well. I preferred to cook it the old-fashioned way over stove top. I prepared the rice as per the instructions which were pretty clear and easy to understand. I will admit, if you exclude the time it took to boil water, the rice was in fact ready within 5 minutes. The result was surprisingly a great tasting and fluffy white rice. With rice that ready in minutes I decided to incorporate it into one of my girls favorite meal “Tomato and Chickpea Rice”.
With just a few basic ingredients from my pantry I was able to prepare this delicious, healthy and hearty meal literally within minutes. Enjoy!
Ingredients:
4 cups of cooked Minute Rice
2 medium tomatoes
1 can of cooked chickpeas or garbanzos
1 large yellow onion
1 green chili (optional)
4-5 cloves of chopped garlic
7-8 curry leaves
3/4 tsp mustard seeds
1 1/2 tsp cumin powder
1/2 tsp turmeric
2 tbsp tomato puree
1/2 cup chopped coriander leaves
3 tbsp canola oil
salt as per taste
Preparations:
- Prepare the Minute® White rice as per instructions and set it aside. You need four cups of this cooked rice.
- Chop onion finely lengthwise and set it aside.
- Chop up both tomatoes into small pieces and set them aside as well.
- Take a deep skillet or a medium dutch oven. Add the canola oil and allow it to heat.
- Once the oil is hot, add the mustard seeds and let it splutter.
- To this add curry leaves, garlic, green chilli and onion. Saute these for about 2 minutes.
- Add the chopped tomatoes, turmeric, tomato puree, cumin powder and salt. Mix them thoroughly. Mash the tomatoes with a potato masher and cook it for another 2-3 minutes.
- Add the chickpeas and cooked rice to the tomato paste and mix them until each and every grain of rice is thoroughly coated.
- Cover lid and cook it on low heat for another 2 minutes.
- Take off heat and garnish it with coriander leaves.
- Serve it with some roasted papads (papadums) and mango pickle.
Useful Suggestions:
- When using the canned chickpeas, rinse it with water a couple of times and throw away the liquid.
- If you wish to make this recipe more spicy, you can add more green chilies.
