About the Recipe
I started making this recipe couple of years back after a new Asian store opened in my town. At that time, I did not know anything about Thai cuisine. I was not familiar with the taste or how to cook it. As I browsed the aisles in the Asian store, I happened to see the Thai curry paste and bought the green curry paste.
When I made it the first time, I followed the instructions on the label and made a chicken curry. I fell in love with this curry. My husband loved how similar and at the same time different it was from the Indian cuisine. He likes spicy food and was blown away by the taste of this curry. Since then, I have made Thai curry many times. I have also made different types of Thai curries. I make it at least once a month.
It is the easiest and quickest chicken curry recipe to make and a perfect recipe to impress your family and friends. This Thai green chicken curry recipe is great for people, who are new to cooking, International students, Bachelor cooks, etc. You don’t need any special cooking skills to make this recipe.
Reasons why I use Store-Bought Thai Curry Paste
- The town that I live in does not have a store where I can find fresh Thai ingredients like galangal, kafir lime leaves, etc. The closest store that I can find some of these ingredients is quite a distance away.
- Store-bought Thai curry paste is convenient. This paste has it all. I don’t have to worry about assembling, cleaning, cutting, and blending the ingredients. All of that work is done for me.
- Cooking is quick with store-bought paste. Just add the paste to the pot. Mix with water, add ingredients, cook, and it is ready in less than an hour.
Types of Thai Curry Paste
There are many different types of Thai Curry Paste. There is the green curry, red curry, yellow curry paste, and Massaman curry. Each curry paste has its distinct taste (see images below). These curry pastes can be found in the Asian Food Market (Plainsboro), 99 Ranch Market (Edison) H-Mart (Edison), etc. If you don’t have these stores near you check online on Amazon. These curry pastes are inexpensive at around $3.99 to $4.99 per tub.
Main Ingredient & Substitutes
Chicken: I use bone-in drumstick and thigh pieces. However, you can use breast pieces for this recipe also. You just have to be mindful of the cooking time as it varies.
Thai green curry paste: is the star of the show. It is spicy, spicy curry paste. So if you don’t like spicy you can adjust the amount of the paste to use. However, it may change the taste of the curry.
Coconut milk: is another important ingredient in this recipe. It balances out all the spicy herbs and brings this whole curry recipe together.
Red bell pepper, bamboo shoots, red pepper: these are the vegetables you can use for the curry. For this recipe these ingredients are optional. If you have them, you can add or you can skip them.
How to Make Thai Green Chicken Curry.
- In a pot add the green curry paste and water. Mix well.
- Allow it to boil.
- Next, add chicken pieces. Add more water if required.
- Cover with lid and cook for 10 minutes.
- Remove the lid, add coconut milk and cook the chicken for another 15 minutes.
- Lastly, add vegetables (optional) and cook for another 3 minutes.
- Remove from heat. Serve it hot with Jasmine rice.

Ingredients
- 2 lbs of chicken
- 2-3 tbsp of Thai Green Curry Paste
- 1 cup coconut milk
- 1/4 tsp turmeric powder (optional)
- salt as per taste (optional)
- 1/4 cup of red bell pepper or bamboo shoots (optional)
Instructions
- Mix the green curry paste with water in a pot well.
- Bring it to a boil.
- Next, add chicken pieces. Add more water if required
- Cover with lid and cook for 10 minutes.
- Remove lid, add coconut milk and cook the chicken for another 15 minutes.
- Lastly add vegetables (optional) and cook for another 3 minutes.
- Remove from heat. Serve it hot with Jasmine rice.
