In honor of Valentine’s Day, I made red velvet cupcakes yesterday. I had never made them before and had eaten it only twice. I had seen the different versions of the red velvet cupcake featured in cooking shows many times before, but I frankly did not understand all the hoopla surrounding it.
So I decided to make it for myself and I can now see why this cake is so popular. After a brief Google search I found this recipe on Allrecipes.com. When everything was said and done, I was a convert. These cupcakes came out absolutely perfect. In addition to being gorgeous and delicious, they were moist and packed with flavor. Add to that the Vanilla Cream Cheese frosting and it was literally an icing on the cake. I hope you enjoy making them as much as I have enjoyed making and eating them. Have a great Valentine’s Day.
Ingredients for the cake:
2 1/2 cups all purpose flour
1/2 cup unsweetened cocoa powder
1 cup softened butter
2 cups sugar
4 eggs
1 cup sour cream
1/2 cup milk
1 tsp baking soda
1/2 tsp salt
1 ounce of food coloring
2 tsp pure vanilla extract
Method:
- Preheat oven to 350 degrees F. Mix flour, cocoa powder, baking soda and salt in a bowl and set aside.
- Beat Butter and sugar in a large bowl with electric mixer on medium speed for 5 mins or until light and fluffy.
- Beat in eggs one at a time.
- Mix in the sour cream, milk, cream, food color and vanilla.
- Gradually beat in the flour mixture on low speed. Do not over beat.
- Spoon batter into paper- lined muffin cups, filling each cup 2/3 full.
- Bake it for 20 to 25 mins or until the toothpick is inserted into the cupcakes come out clean.
- Cool in pans on wire rack for 5 mins.
- Remove from pans and cool them completely before frosting them with Vanilla Cream Cheese Frosting.
Ingredients for Vanilla cream cheese frosting:
1 8oz packet of softened cream cheese
1/4 cup softened butter
2 tbsp sour cream
2 tsp pure vanilla extract
1 16 oz box of confectioners’ sugar
Method:
- Beat cream cheese, butter, sour cream and vanilla extract in a large bowl until light and fluffy. Gradually beat in the confectioners’ sugar until smooth.
Useful Suggestions:
- Original recipes says it makes about 30 cupcakes. With the above ingredients, I ended up with about 48 cupcakes. So if you want to make less, then I suggest using half of all the ingredients.
