I am always looking for quick recipes for family and friends get-togethers. These mini Rabdi Bites are perfect for such occasions. These bites combine the traditional taste of Indias dessert “Rabdi” with the crunchy and cruncy phyllo cups/shells to create a sweet that tastes simply out of this world.
Pop a bite in your mouth and it explodes with different texture and flavor all in a single bite.
These are rabdi bites are pretty easy to put together. Once you assemble all the ingredients, these dessert bites are ready within mins.
What is Rabdi
Rabdi also known as Rabri is a creamy Indian dessert made by boiling and cooking down milk to thicken it. It is then flavored with sugar, chopped nuts and cardamom powder. It is usually paired with Jalebi (another Indian dessert)
How to Make Rabdi Bites in Phyllo Cups (See Video Below)
Traditionally Rabdi takes a long time to make as it involves reducing milk to thicken it to a creamy texture. To save time, I used ricotta cheese which is thick and when the all the ingredients are added tastes similar to the traditional rabdi which half the effort
Ingredients & Substitution Notes
Ricotta Cheese: I use whole milk ricotta cheese for this recipe as it is creamy and does well when baked. You can use any brand of ricotta cheese.
Phyllo Cups: I use the Pepperidge Farms Phyllo cups for this recipe. These phyllo cups are perfect for bite size recipes. They add a cruncy texture which pairs really well with the ricotta cheese (rabdi) filling.
Sugar: Traditional Indian sweets are extremely sweet. I use sugar to sweeten this recipe.
Chopped Nuts: I use coarsely chopped almonds and pistachios for this recipes. However, you can include chopped walnuts too.
Cardamom Powder: is the most important ingredient that is used to flavor and aroma. Indian desserts are incomplete without this ingredient. I personally buy whole cardamom pods and remove the seeds and crusch them. These have the most aroma.
Motichoor Ladoo: is used as a topping or garnish over these bites. I used store-bough motichoor ladoo for this recipe. You can find them in Indian stores.
Instructions to Make Rabdi Bites
This is a 2 part recipe. First includes making the rabdi and second part includes putting all of it together and baking it.
Instructions for Rabdi Filling
- Into a bowl add ricotta cheese. Next, add sugar and combine them well until creamy.
- Add chopped almonds, pistachios and cardamom powder. Mix them well.
- Pour this rabdi mixture into a piping bag (optional)
Instructions to assemble the Phyllo Cups
- Remove the phyllo cups from their package and arrange it on a baking tray.
- Pip the rabdi mixture into each shell. You can spoon it if you want
- Bake these for 15 mins.
- Garnish it with crushed motichoor ladoo.
- Serve at room temperature.

Ingredients
- 2 pack of phyllo shells (total 30 count)
- 1 cup whole milk ricotta cheese
- 1/3 cup sugar
- 2 tbsp chopped almonds
- 2 tbsp chopped pistachios
- 3/4 tsp cardamom powder
- 6 motichoor ladoo (crushed/crumbled)
Instructions
Instructions to Make Rabdi Filling
- Into a bowl add ricotta cheese. Next, add sugar and combine them well until creamy.
- Add chopped almonds, pistachios and cardamom powder. Mix them well.
- Pour this rabdi mixture into a piping bag (optional)
Instructions to assemble the Phyllo Cups
- Remove the phyllo cups from their package and arrange it on a baking tray.
- Pip the rabdi mixture into each shell. You can spoon it if you want
