Quick Bread Pizza is a recipe that incorporates fresh vegetables with cheese melted to perfection. This particular recipe is great to serve as an appetizer, snack or a side to an entree.
This bread pizza is easy to make and full of flavor. You can use different combination of vegetables as topping to make this recipe.
About the Recipe
Although I like to believe this recipe is my creation, its origin is in Mumbai, India. During my college days my friends and I would frequent the local Udipi restaurants and one of the favorite dishes to order was the pizza (I nicknamed it Udipi Pizza). That pizza in no shape or form resembled the pizza we find here in the US. For us however, it was the closest we had to a pizza.
I loved how all the ingredients came together and created a perfect combination of flavors. Even though I don’t know exactly what was used in Udipi Pizza, over the years I tweaked it and adapted it enough to make an appetizer version of the same. Instead of a pizza base, I used soft bread to hold all the toppings. It is a really easy, quick and great for entertaining or have a quick snack.
The great thing about this recipe is that you don’t need to make any pizza dough. If you want to eat pizza and don’t want the hassle of ordering and waiting for you pizza to arrive. You can make this quickly if you have all the ingredients at home. It is like making your own personal pizza at home.

Ingredients for Quick Bread Pizza
- 1 medium sized Italian bread/Cuban bread
- 1 large red onion
- 1 large tomato
- 1 large green bell pepper/Capsicum
- 2 green chilli (optional)
- 1/2 tsp salt
- 1 1/2 cup grated Monterey Jack (Jalapeños) Cheese.
- couple spoons of butter spread
How to Make Bread Pizza
- Chop all the vegetables finely and add them to a mixing bowl.
- Add salt to the vegetables and mix them.
- Cut the bread lengthwise into half. Add the spread on both pieces of bread
- Place both the pieces on a cookie sheet.
- Top the bread generously with all the vegetables and bake it at 350 degrees for 7 – 10 mins
- Remove from oven.
- Add add the grated cheese on top
- Place it in the oven again and bake it until the cheese has melted.
- Remove it from the oven and let it cool for a minute.
- Slice it into 1″ pieces and serve it with Mint chutney or Sriracha chili sauce.
Useful Suggestions:
- You can substitute the cheese with regular Monterey Jack cheese or Sharp White Cheddar cheese.
- For my friends in India, you can substitute it with Amul Cheese.
- You can also use red or yellow bell pepper.
- You can also add corn or chopped broccoli for more vegetarian option.

I make a similar kind of dish except that I put a layer of craem cheese (mixed with ranch dressing) on the bread prior to spreading vegetables. I call it this dish as “cheese fingers”. Kids love it.
