Holidays are done with and it is a brand New Year. When the New Year rolls in, so do the resolutions. Making resolutions are easy, however, keeping up with them is the tough part. My resolution this year is to be particular about what I eat. This is why I am glad I can depend on Progresso Light Chicken Noodle soup.
As a mom of two girls with various after school activities, life is very busy. Even with all the planning, there are days I run out of time and cooking homemade dinner every night is just not possible. It is for nights like this that I am looking for quick, easy and healthy meal solutions. A quick trip to Walmart is all I need to stock up my pantry with Progresso Light Soups.
When I make Progresso Light Chicken Noodle soup for my girls they absolutely love it. I have to make double batch because they ask for seconds. I personally like the fact that it is light which means fewer calories. The things that surprised me was the taste. Even though it is light, it is rich and full of flavor. This soup is packed with quality ingredients including antibiotic free, chunks of all white chicken meat, flavorful noodles and a healthy quantity of carrots.
However, IÂ love to add my own delightful spin to this soup. I like to incorporate some greens to this already healthy and appetizing soup. I also like to serve it with rice cake croutons to add some crunch and texture. Check out the recipe below to see how you can make it too. Enjoy!
Progresso Chicken Noodle Soup with Spinach and Rice Cake Croutons
Ingredients:
2 cans of Progresso Light Chicken Noodle Soup
1 bunch of baby spinach
2 to 3 rice cakes broken into pieces
Preparation:
- Pour the soup in a stock pot and bring it to a boil.
- Add the spinach and let it cook for 2 to 3 minutes.
- Take it off heat.
- Serve it hot topped with broken rice cakes croutons.

I love Progresso soups & always keep a few cans in the pantry. But I never thought about adding rice cakes to the soup! What a great way to add crunch to the soup without all the calories & salt in crackers. Love it!
