Pancake Mix Gulab Jamun is a made from scratch Gulab jamun recipe. The two most important ingredients are milk powder and pancake mix. Not only is it quick and easy, but once you make it, you will never use a readymade gulab jamun mix again.

What is Gulab Jamun?
Gulab Jamun is a classic Indian dessert. Traditionally it is made from milk-solids which is achieved by boiling and reducing the milk. The dough made from reducing milk is deep-fried similar to a donut and then immersed in sugar syrup flavored with cardamom, rose water (optional), Kewra (optional), or saffron (optional). It is a sweet delicacy which is a must-have for almost every important occasion including weddings, festivals, and other events. It is popular around the Indian subcontinent including countries like Pakistan, Nepal, Maldives, and Bangladesh.
You will find Gulab Jamuns in most sweet shops in India. You can find canned gulab jamun in Indian stores as well as Amazon. If you prefer to make your own, you can find Gulab Jamun Mixes like the ones shown in the picture below.
How to Make Gulab Jamun at Home
- There are three ways to make gulab jamun at home. One is the traditional and time-consuming method of reducing milk to milk solids.
- The second method is to buy the readymade Gulab Jamun mixes like Gits, Haldiram, etc.
- The third method is to make it with milk powder and Pancake mix.
Milk Powder and Pancake Mix Gulab Jamun
My recipe for gulab jamun is made with milk powder and pancake mix. Many years back (almost 23 years), a friend of mine had given me this recipe and I had forgotten about it. Recently when I was cleaning my basement I found this roughly written recipe note. I made it as per that note and the result was not good at all. Thanks to lockdown, I tried it two more times, tweaking the measurement of ingredients and preparation, and finally found the right way to make it.
Ingredients for Gulab Jamun Dough
- 1 cup of milk powder
- 1/4 cup pancake mix
- 2 tablespoon melted butter
- 1/4 cup milk
- oil for frying
Ingredients for Sugar Syrup
- 1 1/2 cup Sugar
- 1 cup of water
- 1 teaspoon cardamom powder
- few strands of saffron (optional)
Instructions:
- In a mixing bowl combine milk powder and pancake mix.
- Next, add melted butter and mix it all together.
- Gradually add milk and knead the dough. Knead it until it is of medium-soft texture.
- Grease you palms with melted butter and divided this dough into 20 balls of about 1″ size.
- In a saucepan add sugar, water, cardamom powder, saffron, and bring it to a boil. Once it has boil reduce heat and let it simmer.
- In another deep pan or kadhai heat oil to medium-hot temperature. Add the gulab jamun balls and fry it on low flame until golden brown.
- Take it off and drain the gulab jamuns on a paper towel.
- Immediately add it to the sugar syrup. Allow it to cook in the sugar syrup on low heat for 5 minutes and then take it off heat.
- Serve it warm.

Notes for Making the Perfect Gulab Jamun
- One important thing to remember is that the oil to fry the dough should not be very hot. The temperature of the oil should be medium hot and the jamuns should slowly cook in oil. If the oil is too hot, the outside of the jamuns will cook and almost burn and the insides will remain raw.
- Depending upon the amount of oil you have for frying, you can actually fry up all the jamuns in one batch.
- The texture of this Gulab jamun should be soft yet firm and not squishy like you get in Indian restaurants.
- Lastly, you can make this ahead of time and refrigerate it. Warm it up in the microwave for 1 or 2 minutes (depending on the quantity) before serving and you are good to go.

Which Pancake Mix Should I use to Make Gulab Jamun
You can use any pancake mix to make this recipe of gulab jamun. I have used Bisquick Pancake Mix and even the Walmart Brand of Pancake Mix and the gulab jamuns turned out great.

Any nonfat milk powder is good? Please let me know

Aruna, you can use any brand of milk powder. I used the Great Value brand from Walmart.

The ratio is not correct. The gulabjamuns turn out to be too soft. The taste is great but too soft.

I test my recipes several times before posting it. I should also say, when I say one cup, it is not a random cup or wati (as we say in Hindi). I use the American measurement cups and spoons. Try using those and I am sure your gulab jamuns will turn out great.

I just made jamuns today using this recipe. OMG! These were the best gulab jamuns I have made in my life!!!! So tasty, firm (not too soft or hard), soaked up the syrup in under a minute and perfectly cooked. I made the dough a little stiff and added a dash of Eno’s fruit salt. I make Gulab jaman with a similar recipe with few changes. I use 1 cup powder milk and 1/2 cup pancake mix. Instead of butter and milk, I use 35% cream to knead the dough. No fix quantity of cream. You can use as much is needed to make a dough that you can easily make balls with, without any cracks on them. You will not need to put oil in your palms to make balls.
Rest is same for syrup and frying.
