Mexican Wedding Cookies is a simple and delicious recipe which is easy to make. They are recognized because of their white color which is due to the liberal coating of confectioner’s sugar.
Last week TEE came home and told me that I have to cook something Mexican for her Spanish Honors class. They had just completed a PowerPoint presentation about Latin/Hispanic celebrity and they were required by their teacher to bring some food from their celebrity’s country of origin.
TEE wrote about Guillermo Del Toro who is a Mexican filmmaker, director, producer, screenwriter and novelist. So she was required to bring a Mexican dish. Of course I was the one who had to cook it. TEE also mentioned that it had to be something different and that she was not allowed to bring tacos, burritos, chips & salsa or guacamole. Well as an Indian I was only familiar with those foods.
So I went online and came across the recipe for Mexican Wedding Cookies.
Mexican Wedding Cookies are also known as Polvorones. They are also known as Mexican Christmas Cookies.
I went through the ingredients and was glad that they were easy to find, and I already had most of them in my pantry. Even the process of making them was pretty easy. So I decided to make them for TEE’s class. However, since I had never tasted them, I was not sure what to expect.
During my research I found some recipes called for cashews, while others called for almonds, pecans and so on. I decided to use almonds because I already had them in my pantry. The other thing I had to do was make changes in the ingredients. Instead of 2 cups of all-purpose flour (original recipe), I used 2 ½ cups of flour. I am glad I did that because the consistency of the dough was perfect. The result was absolutely delicious. It was crumbly, buttery and moist. That is when I decided I to post the recipe here.
When TEE returned from school the next day I asked her verdict. She said that her classmates loved it and were asking for seconds. I have to say that made me happy. Trust me when I say, this is one of the easiest cookie recipe I have ever baked. I hope you make it too and Enjoy!
Ingredients for Polvorones
1 cup softened butter (2 sticks)
2 1/2 cup all-purpose flour
1 cup finely chopped almonds.
1/2 cup sugar
1 1/2 tsp vanilla essence
1/2 tsp almond extract (optional)
a cup of confectioner’s sugar (powdered sugar)
pinch of salt
Preparations:
- In a mixing bowl beat butter and sugar until it is creamy and fluffy.
- Add vanilla essence and almond extract and beat again for a few seconds.
- Stir in chopped almonds, salt and mix it with a spoon.
- Add in flour 1 cup at a time and mix it together until it forms a soft dough. You can work with your hands to form the dough.
- Cover and chill for an hour.
- Remove and shape the dough into 1″ balls. While you are doing this preheat the oven.
- Place it on a baking or cookie sheet lined with parchment paper.
- Bake it at 350 degrees for 13 minutes.
- Remove and allow it to cool. Do not allow it to cool completely.
- When it is still warm roll it in powdered sugar and set aside.
- After the cookies have cooled down completely roll in the powdered sugar one more time.
Useful suggestions:
- For those with allergies, you can make this without any nuts.

The Mexican Wedding Cookies looks like a great snack that kids would fall in love right away with some healthy ingredients to make it the best. The recipe sounds easy to do & I would love to try myself over a weekend.
