Malvani Garam Masala Powder is a mixture of spices that are lightly roasted and ground to create an authentic, aromatic, spicy, blend that you can use for all kinds of delicious Malvani recipes.

This recipe is from my mother-in-law. Like most home cooks and women of her age she does not measure the ingredients. Her way of measuring is to grab a handful or couple spoonfuls of ingredients. So I would like to give a huge shout out to her. She patiently worked with me to come up with the exact measurement of ingredients to make this awesome garam masala.
Are all Garam Masala the same
All garam masala is not created equal. Different regions in India have their own blend of garam masala powder. The garam masala you use in Punjab (Northern India) is completely different from the garam masala you see in other parts of India. This is because, each region will use their own measurements/ratio and blends of whole spices to create their powder. They will have their own unique blend of masala. This particular recipe for Malvani garam masala is local to the Malvan; a coastal town in Southern most district in the western state of Maharashtra.
There is no such thing as Curry Powder in India
You must have heard this saying or phrase many, many times over by famous Indian chefs and even food bloggers. This is true! India is very diverse with almost 25 states. Each Indian state is like a country in itself. They have their own language, cuisine, culture and fashion. Every region has their own blend of curry powder which literally changes its composition even if they are 20 miles away.
About Malvani Cuisine
Malvan is a coastal town, so ingredients like rice, coconut and fish are very common here. Most of the time the recipes are hot and spicy. They are especially famous for their non-vegetarian dishes like mutton and chicken curry. They are also known for their seafood curry like prawn and crab curry (recipe coming soon).
Ingredients for Garam Masala
- 1/2 cup coriander seeds
- 1 tbsp cumin seeds
- 1/3 cup cinnamon sticks
- 1 tbsp black pepper
- 1 tbsp cloves
- 3 big bay leaves
- 1 tbsp white poppy seeds (khus khus)
Instructions to Make Malvani Garam Masala
This is one of the easiest garam masala powder you will make. All you have to do is assemble the above ingredients. once you make this you will never buy store bought masala again. I don’t even need to post step by step pictures for this recipe.
- Dry roast all the spices individually. Set them aside to cool.
- Mix them together
- Grind them in a blender or coffee grinder into a fine powder.
- Store them in an air tight container
How to Store Garam Masala Powder
You can store garam masala powder in any airtight container or glass jar. Since this is a dry powder it does not need refrigeration.
How long can we store this masala for
You can store and use this garam masala for up to almost a year. All the ingredients are dry and as they are roasted before blending, it gives them a longer shelf life.
Where to shop for ingredients for garam masala in US
You can find most of these ingredients in regular supermarkets. Sometimes they will be stocked up in the International Aisle like Mexican or Indian food aisle. You can also check out Indian stores. Indian stores are perfect and you can find every kind of spice in there. Last but not least, you can find many of these ingredients online like Amazon or Walmart.
