I know the name Seven Cup Sweet sounds so vague right? I don’t know the origins of the recipe or of the name. What I do know, is that when my mom made this, as kids my siblings and I couldn’t wait to finish it all up. It is also known as Seven Cup Burfi. It is made during Diwali, but my mom used it make it whenever she craved it.
What is Seven Cup Sweet
It is an Indian version of fudge like cookie made with chickpea flour/besan and couple of other ingredients. The reason it is named seven cup sweet is because excluding sugar, every other ingredient used is only a cup. So it is a very easy recipe to remember. The cooking time is a bit involved and longer, but the result is worth it. For all those with sweet tooth, this is a treat you will definitely love. Enjoy!!
Easy to Make Seven Cup Sweet | Seven Cup Barfi
Ingredients:
1 cup chickpea flour
1 cup ghee
1 cup milk
1 cup grated fresh coconut
3 cups sugar
Method:
- Combine all of the above in a pan or pot. Mix it and allow it to cook on a medium flame.
- Keep stirring it till this mixture starts to bubble and thicken up.
- Once it start to separate from the sides of the pan, take it off the heat.
- Immediately pour it on a greased pan (grease it with either ghee or melted butter) and spread it. Cut it into squares of required size while it is still warm.
- Set it aside to cool.
- Once it has completely cooled, store it in an air tight container.
Useful Suggestions:
- If you don’t have ghee handy, you can use butter. It will be less aromatic.
- The stirring part is bit involved, but it is necessary to prevent the mixture from burning.
- If you want a softer texture you can remove it off the flame as soon as the mixture thickens. I like a a crumbly texture, so I cooked it longer.
- It is extremely sweet, so if you want you can reduce the amount of sugar.
