Rice Vade with Tortilla Press, can you make it? The answer is yes. The minute I had this idea I knew I had to explore that method/process and try it out for myself.

What is Rice Vade?
Rice Vade also known as Tandalache Vade is a deep fried flatbread/poori made of rice flour. It is usually served with Malvani Mutton or Chicken Curry. My husband loves rice vade because his mom used to make it all the time especially during festive and celebratory occasions . It is something that has been passed down from generations in his family as well as other Maharashtrian families.
I learned this recipe from my mother-in-law and it is a classic Konkan/Maharashtrian recipe. You can read all about it in my other post, Malvani Rice Vade and also check out the written recipe.
Traditional process of making rice vade is time-consuming
That is one of the reason I make it rarely. One person can do it, but you need at least two people to do it efficiently and quickly; one to form the flatbread while the other person focuses only on frying it. Each step is important and has to be done just right. So why am I making such a big deal about it. Well, the traditional process requires you to use your fingers to press down on the dough until you have the size you need. This process takes time and when you have to make rice vade in large quantities with your kids in the background hovering and screaming they are hungry, it can be frustrating.
How can a Tortilla Press Help to Make Rice Vade
Tortilla presses are awesome. You can use tortilla press to make flatbread with any dough that does not have gluten in it. Rice flour dough does not have gluten (although my mom-in-law’s recipe does call for a bit of whole wheat flour) and I knew would work very well with a tortilla press. However, I had to try it out myself. So I hopped over to Amazon and after reading several reviews bought the Victoria TOR-003 Cast Iron Tortilla Press, 8″, Black.

After trying it out for myself, I can tell you I am super happy and over the moon. This tortilla press is now my favorite kitchen gadget.
Step by Step Pictures to Make Rice Vade with Tortilla Press

Preparations:
In a mixing bowl, add rice and whole wheat flour, turmeric, salt and water (as required – check recipe). Combine them all together to knead a soft dough. Set it aside for half hour. You can knead the dough by hand or with a Kitchen Aid Mixer. If I am making rice vade in large quantity, I like to use my Kitchen Aid Mixer.
Divide the dough into 1 3/4″ balls. You will get about 15 to 18 balls of rice dough.
Before you start with the rice balls, place plastic sheets on both sides of the tortilla press. I used a storage/ziploc bag which I cut open on two sides. You can also use parchment paper. Make sure you have two layers of it covering both the top and the bottom of the press. Lightly apply oil to both the plastic sheets. Place a rice ball in between the two layers of plastic sheets. Place it a bit off center. Close and press down. For rice dough, don’t press down too hard. Also you don’t need to use the handle.
If you press it too hard, the flat bread will spread too thin and you will not be able to peel it off without breaking it apart. This vade has to be thick.
Carefully remove the pressed vade and add it to the hot oil.
Fry it on both sides until it turns golden brown. As you can see it puffs up really nicely.
Remove from oil. Drain on some paper towels. Set it aside in a covered bread basket or container until further use. Rice vade is best served warm because it needs time to soften up.
Can you use Tortilla Press to make other Indian dough
Yes. You can use it to make other Indian dough which do not have gluten in them. For eg, in addition to making it with rice flour, you can also use it with Jowar, Bajra and corn flour. Whole wheat flour and all-purpose flour don’t work well with this kind of tortilla press.
