Herb Roasted Baby Potatoes is a recipe that combines all the aromatic herbs like rosemary, thyme, sage and is quick, simple and easy to make.
I started making this recipe after I came across The Little Potato Company brand of potatoes in ShopRite about 2 years ago. They are convenient and the portion of 1.5 lbs., is perfect for a family of four. Since then I have been making herb roasted baby potatoes for Thanksgiving. For this recipe I used their Terrific Trio bag of potatoes mostly for aesthetic reasons. I love all the different color of baby potatoes.
Where can you Find Baby Potatoes
You can find baby potatoes in most local supermarkets. I have found them in ShopRite, Shop & Stop and also in Walmart and even in Indian stores. However, you can use any type of baby potatoes for this recipe.
Ingredients for Herb Roasted Potatoes
- 1.5 lb of baby potatoes
- 1 tbsp rosemary (finely chopped)
- 1/2 tbsp thyme
- 1 tbsp of sage (finely chopped)
- 1 tbsp lemon juice
- 2 tbsp of olive oil
- salt as per taste
- 1 tsp chili flakes (optional)
How to Roast Baby Potatoes in the Oven
Wash and Rinse the baby potatoes. Place them over some kitchen towels to dry.
In a mixing bowl, add the potatoes. Next add rosemary, thyme, sage, lemon juice, olive oil, chili flakes and salt.
Preheat the oven to 400 degrees. Place all the potatoes on a baking tray and bake it for 30 to 35 minutes.
Once done, remove it from the oven. You can check if it is completely done by inserting a tooth pick. Serve it nice and warm.

Notes
You can add more chili flakes or even fresh green chilies or jalapenos if you want to make a spicy version of this recipe.
