Grilled Chicken Kababs is a recipe that combines the goodness of boneless chicken pieces with aromatic Indian spices and fire from the grill for an out-of-this-world gastronomical experience.

About this recipe
Grilled chicken kababs is a recipe that I came up with and perfected after years of experimentation and improvisation. I am glad to say, all my hard work paid off. These succulent pieces of grilled chicken has the right amount of spice, flavor, taste and aroma and is one of the best chicken kababs in my opinion.
If you grill these kababs over coals or propane grill, they taste just like the infamous Indian tandoori chicken. Trust me when I say these chicken kababs will be a huge hit at your parties.
I have shown below step-by-step pictures of how to do it and also included the YouTube video (click here) or you can check the recipe card below. I promise you that you will have an amazing tasting – grilled kababs that does not require a lot of effort.
Ingredients for Chicken Kababs Marinade
- 2lbs if boneless chicken (thighs and drumstick pieces)
- 2 tbsp chili powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1/4 tsp turmeric
- 2 tbsp yogurt
- 1 tbsp oil
- salt as per taste
- 1/4 cup white vinegar
Ingredients for the Onion Paste
- 1/4 cup chopped onions
- 1″ pc of ginger
- 3 to 4 cloves of garlic
- 1 green chili
Veggies:
- 1 large yellow pepper
- 1 large green pepper
- 1 large orange pepper
- 1 large onion.
How to Marinade Chicken for Kababs
Marinating the chicken is easy and not complicated at all. The preparation for the ingredients, at the most, may take about 5 minutes. First, you have to make the onion paste. For that, add onion, ginger, garlic and chili and blend it to a fine paste.
Next, cut up all the veggies into big pieces and place on a plate. These veggies will go in between the chicken pieces on the skewers. If you like onions, then feel free to add one more onion to this lot.
In a large mixing bowl, add the onion paste, chili powder, coriander, cumin, turmeric powder, yogurt, oil, salt and vinegar. Mix it well.
Add the chicken pieces and mix again. Let it marinate overnight in the refrigerator. If you don’t have time, you can allow it to marinate for 4 hours. The more time you marinate, the better it is.
Next thread the pieces of chicken into a metal skewer. Place the veggies in between each chicken piece. You can also use wooden skewers for this. However, before using the wooden skewers, make sure to soak it in some cold water.
How to cook Chicken Kababs on Grill
Now comes the fun part. Pre-heat the grill to 400 degrees. Dip half an onion in oil and use this to oil up the grills. Oiling the grill will make it non-stick and the chicken won’t stick. Secondly, the onion adds another level and flavor to the kababs.
Place the chicken skewers. Close the lid. If the temperature reaches more than 500 degrees, reduce the heat. Grill on each side for 12 minutes. Repeat. Before turning it over, brush some oil over the chicken pieces with the same onion. Flip it and allow it to cook for another 12 minutes or until done.
Remove the chicken skewers and allow it to rest for 5 minutes before serving. Serve it with some mint yogurt dip as an appetizer. You can also place it over a wrap of flatbread and make a meal out of it.
How to Serve Grilled Chicken Kababs
I like to make these grilled chicken kababs for my get-together and serve them as appetizers. However, recently I have started using it to make sandwiches, wraps, soft tacos, etc. If I have time in the future, I will try to include recipes for those.
Accompaniment with Kababs
You can serve this chicken kababs with cucumber yogurt sauce. It is super easy to make. You can also serve it with some mint chutney on the side or mix in the mint chutney with yogurt and serve it with these delicious kababs.
Yes, you can make these chicken kababs in the oven. Pre-oven to 350 degrees. Cook the kababs for 12 mins on each side. For the final step, broil the chicken for 7 additional mins to get the charred marks.
Yes, you can definitely cook these kababs in the skillet or griddle. The taste will be slightly different. To cook them in the skillet, apply oil to the skillet with the onion (like I showed above). Once the skillet is hot, place the chicken kababs and follow the same cooking directions above. Make sure to reduce the flame the medium or low while it is cooking, otherwise you house will be filled with smoke.
