Eggless Fugias are fermented, light, airy, deep-fried small bread, similar to Zeppole. The meaning of Fugia translates to a balloon. Since these deep-fried small, round bread look like balloons, they are named as such.
Fugias are made during Easter, Christmas and other important events like weddings, etc., by the East Indian community of India. It is a popular recipe, which is traditionally served with curries like chicken, pork or beef.

The process of making fugia usually involves a day. Traditionally the dough is made the night before. It is left overnight to ferment and then they are fried the next day.
My recipe for fugia is slightly different. I don’t use eggs in this recipe. I am sensitive to the smell of eggs. So if there is nothing to mask the smell of eggs, I cannot eat it. So I tried and tested the recipe and finally made an eggless fugia recipe.
Not only is this fugia recipe eggless, but it is a quicker version of the traditional recipe. Instead of fermenting the fugia dough overnight, you only have to ferment it for one or two hours, depending upon where you live.
Ingredients for Eggless Fugias
- 2 1/2 cup all-purpose-flour
- 1 packet of Active Dry Yeast
- 1 tbsp + 3 tsp of sugar
- 1/2 cup warm water
- 1 cup coconut milk
- 1 tbsp oil
- oil for frying
- salt as per taste
Instructions to Make Fugias
- In a small mixing bowl, add water and sugar. Mix well. Add the yeast and mix. Set it aside for 10 mins.
- In a mixing bowl, add flour, salt and sugar. Dry mix them for few seconds.
- Next, add oil and coconut milk and start making a dough.
- Finally, add the prepared yeast and make a sticky dough.
- Beat this dough for 5 minutes if using a kitchen aid mixture or you can use your hands as well to beat the dough.
- Cover this dough with a kitchen towel and place it in a warm place to rise.
How to Form Eggless Fugias
- Heat oil in a kadhai or deep frying pan. Grab some dough with your left hand (see image below). Squeeze some dough in between you thumb and fore finger. At the same time, wet your right hand fingers and pinch off the top of the dough. Drop this into the hot oil.
- Keep stirring and fry the fugias in medium flame until they are golden brown in color.Repeat until you have used up all the dough. Check the video in the recipe card below or YouTube

Notes
If you are living in a warmer climate then ferment this dough for only an hour or until you have seen the dough double in size. If you are living in colder climate then ferment it for 2 hours.

Yes, you can substitute coconut milk with regular milk.
No. You do not have to use an electric mixture to make the dough. You can use your hands to do it but make sure to beat the dough well and aerate it as much as possible so that it ferments well. I like to use electric mixture because I have pain in my wrist due to which I am not able to use my hands as much as I like.
Yes, this recipe for fugiya is eggless. You can add one egg if you wish. However, it is not necessary.
My recipe does not need overnight fermentation. Like I mentioned above, if you live in a warmer climate ferment it for an hour and if you live in a colder climate ferment for 2 hours.

Hello Tanu, I understand. I eat non-veg food, but cannot stand the smell of egg in recipes like these. So I experiment and test to come up with recipes without eggs. If you have made this recipe let me know how it has turned out.
