Coquito is an alcoholic drink enjoyed during Christmas time. I got this recipe from one of my office colleagues who used to make it during our annual office holiday party. I loved this drink so much that now I make it during Christmas time too.
Does Coquito Have Eggs in it?
Some people make Coquito with Eggs, but this recipe that I have is without eggs. If you are making it with eggs then you have to make sure the eggs are as fresh as possible and the drink is used up within 3 to 4 days. When using eggs the method to make Coquito is also different. Coquito with eggs needs to be cooked to eliminate the risk of salmonella.
Ingredients for Coquito
- 2 cans of coconut milk (14 oz or 400 ml)
- 1 cup of white rum (8 oz)
- 1 can of condensed milk (14 oz)
- 1/2 tsp vanilla essence
- 1/2 tsp cinnamon powder (see note)
If you don’t have the cinnamon powder you can add ground nutmeg. On the day I made this recipe I ran out of cinnamon powder and decided to used nutmeg and loved the taste. So it is an option you can consider only if you don’t have cinnamon powder with you.
Instruction to Make Eggless Coquito
This recipe for coquito is very simple. I promise you this is one of the easiest recipes you will ever make. Just measure all the ingredients. Add them to the blender and mix it well. Pour it into a serving jar and refrigerate it for 2 hours. Serve chilled in small glasses
I use canned coconut milk for this recipe. You can, however, make Coquito with fresh coconut milk as well. For the canned coconut milk, I like the Aroy-D coconut milk because it does not have any added ingredients. It only has coconut milk and water (see image below).
How to serve Coquito
You can serve coquito in small glasses or shot glasses as it is very rich and sweet in taste. You can garnish it lightly with ground cinnamon or nutmeg. In the spirit of Christmas, I thought it would be fun to garnish it with star anise.
