Egg Vindaloo is spicy Goan curry/base that is made with chilies, vinegar, garlic, sugar and other spices. It’s combination of ingredients lends it a fiery and unique taste that is amazingly delicious and is perfect with any kind of meat.
Vindaloo curry or sauce originated in Goa, India and was heavily influenced by the Portuguese recipe of carne de vinha d’alhos, which means meat in garlic marinade. (Wiki).
Goa was a colony of Portugal for almost 450 years. So it is natural to find Portuguese influence in the Goan cuisine.Over the years Goans adapted the Portugese recipe, added chilis and other Indian spices and made it their own.
Growing up in a predominantly Catholic neighborhood in Bombay, I remember the sweet smell of vindaloo wafting through my neighbors’ windows during the weekedn. The most common form of vindaloo you will find in India is the Pork Vindaloo.
Why I Make Egg Vindaloo
My family and I don’t eat pork, my mom never made this recipe. So, I researched the ingredients and decided to adapt and make vindaloo with boiled eggs. I have to say, it tastes amazing and unlike the fake vindaloo that you get in restaurants here in NJ. My advice to you guys, make it yourself because then you will make an authentic vindaloo recipe.
Depending on the type of red chilies used, Vindaloo can be fiery and hot, or mild. I made the mild version of it which ended up sweet, tangy with a touch of heat. I hope you enjoy this recipe for egg vindaloo and and try it. Enjoy!!
Ingredients for Egg Vindaloo
5 hard boiled eggs
4 dry red chilies
2 medium onions
4 cloves of garlic
1/2″ ginger
1 tsp cumin seeds
1/2″ cinnamon stick
4-5 tbsp of vinegar
1 tbsp sugar
1/2 tsp garam masala
3 tbsp oil
salt as per taste
1 1/2 cup water
How to Make Egg Vindaloo
- Grind red chilies, garlic, ginger, cumin seeds, cinnamon stick and 2 tbsp of vinegar. Grind it to a smooth paste.
- Chop onion finely and set it aside
- In a small bowl combine sugar and rest of vinegar and mix properly.
- Heat oil in a sauce pan and add the chopped onions. Saute them until golden brown.
- Next add the ground paste and salt. Saute it some more with a sprinkling of water.
- Add vinegar and sugar solution, garam masala and water. Simmer for a minute
- Lower the eggs gently into the curry and simmer further until it has thickened.
- Remove from heat and serve it hot with rice or rolls.

Notes to Make the Perfect Vindaloo
- You can either serve the eggs whole or cut it in half.
- It tastes best with boiled rice. I serve it with Jasmine rice and it went well with it too.

This is quite different than anything I have ever had but it looks very good. I would prefer mine with egg also, although I do eat pork. For my family, I would have to make it a bit on the milder side…and we do love sweet and tangy.
