NexMy little one “S” begged me to make this for her. She was so convincing that she prepared the list of ingredients for me when I went shopping for groceries. I have to say this recipe for Easter Egg Nests is fun and easy to make. It is also fun for kids as I could see this first hand with with ‘S’. She helped me top the rice krispie nest with sweetened shredded coconut and then very carefully place the candy eggs on top. Once it was all finished she could not contain her excitement and was proud that she helped me make it.

Easter Egg Nests with Rice Krispies
Ingredients:
1/4 tsp water
2-4 drops of green food coloring
1/2 to 3/4 cup flaked sweetened coconut
1 packet (10 0z) regular marshmallows
1 tbsp butter
6 cups Rice Krispies
1 bag of miniature Cadbury chocolate eggs or malted milk eggs
Preparations:
- Stir together water and food coloring in a bowl.
- Next, add coconut and stir the entire mixture together until the coconut is green.
- Melt butter in a large saucepan over low heat.
- Add marshmallows and stir it until they have all melted.
- Remove from heat and add the Rice Krispies and mix them thoroughly
- Spray a spoon and a muffin pan cups with cooking spray.
- With the same spoon, use it to spoon some mixture in the muffin pan cup.
- Shape the mixture within each cup to make it a bit hollow in the center.
- Allow it to cool in the pans.
- Once it has cooled, remove it and set aside.
- Decorate it with the green coconut flakes and candy eggs.
