Cocoa Crinkle Sandwich are festive, soft brownies like chocolate cookies filled with buttercream frosting and finished with holidays sprinkles. These cocoa cookies are perfect for the holidays.

About the Recipe
I found this recipe in one of the cookbooks (Bake Sale Cookbook) I bought from our local library book sale. The recipe looked interesting. However, as I did not have all the ingredients at home, I kept putting off making it. One day, just like that the stars aligned. I found all the necessary ingredients for this recipe in my kitchen pantry. I made these cookies and my youngest daughter and husband just loved them.
The original recipe included candy cane pieces for decoration. I did not have any candy canes with me, so I used holiday sprinkles. Another change I made to this recipe is I used vanilla buttercream frosting instead of chocolate frosting. I am extremely proud of myself for this change because taste wise it made a huge difference. It added sweetness and balanced the bitterness of the cocoa powder.

Ingredients for the Cocoa Crinkle Sandwich Cookie
All-purpose Flour: I always use unbleached all-purpose flour for baking.
Unsweetened cocoa powder: for this recipe I have used Hershey’s cocoa powder. You can use any brand of cocoa powder you want
Butter: room temperature butter is not required for this recipe. If you read the steps below, you will see how to use butter straight from the refrigerator.
Sugar: a cup is used in the cookie dough. The rest of the sugar is used to roll the cookie dough balls before baking.
Eggs: I used eggs straight out of the refrigerator. It does not have to be at room temperature.
Vanilla essence, Baking soda & Salt: these are the basic required ingredients.
Butter Cream Frosting: I made my own butter cream frosting for this recipe. You can use store-bought frosting to save time.
Sprinkles or Crushed Candy Canes: Original recipe required crushed candy canes. However, I substituted it with holiday sprinkles in red and green color.
How to Make the Crinkle Cookies
- In a mixing bowl combine, all purpose flour, baking soda, and salt.
- Next, melt butter in the microwave. Add 1 1/4 cup of sugar and whisk it until smooth.
- Whisk in eggs, one at a time until blended.
- Add vanilla and mix it in some more.
- Stir in the flour mixture until well combined. Wrap the dough in a plastic wrap and refrigerate for 2 hours.
- Preheat oven to 350 degrees F. Line the cookie pan with parchment paper.
- Shape the cookie dough into 1″ balls.
- Roll the balls in the remaining sugar and place them on the cookie pan 2″ apart.
- Bake for 12 minutes. Remove from oven and allow let them sit in the pan for 5 minutes.
- Transfer the cookies to a wire rack to cool completely.
Time to put together the Cocoa Crinkle Sandwiches
- Spread 2 tsp of frosting over the flat side of the cookie.
- Place the second cookie over the frosting.
- Press down slightly to allow the frosting to squeeze out between the cookies.
- Roll the exposed frosting over the holiday sprinkles.
- Store it in an airtight container.
Yes, you can use an electric mixer to mix the wet ingredients for this cookie dough. You can either use a whisk or an electric hand-held mixer, too. For this recipe I used my kitchenaid mixer because my hand hurts after a while.
Yes, you can make this cookie dough ahead of time and keep it in the refrigerator for 2 to 3 days.

Ingredients
- 1 3/4 cups all-purpose flour
- 1/2 unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup butter (1 stick)
- 1 1/4 cup sugar
- 1/2 cup sugar (for rolling cookies)
- 2 eggs
- 2 tsp vanilla
Ingredients for Decoration
- 1 can buttercream frosting
- 1/2 cup sprinkles
Instructions
