Mix Daal Vadas is a deep fried savory fritter made with a combination of 3 different types of daal. These vadas are made with chana daal (split chickpeas), moong daal (split mung beans) and urad daal (split black gram).
Mix Daal Vadas are a South Indian specialty and are popular as breakfast food or mid-day snacks. With some additional ingredients these daal vadas are simply delightful little treats that will fulfill your craving for fried food.
About Mix Daal Vadas
While growing up, I loved it when my mom made this for us.She would make it for our late afternoon snack. My siblings and I could not wait to gorge on these when the aroma of the frying fritters filled the air. Although frying was involved she labeled it as healthy because there were three different lentils, and that would make up our protein for the day.
What do these daal vadas taste like
I would compare the taste of Daal Vadas to a denser and savory version of hush puppies; crispy on the outside and soft & fluffy on the inside. This is one of my favorite appetizers to serves when I have friends over. My vegetarian friends love it when I make these and it is usually the first to go.
Ingredients for Vada
1 cup channa daal (split chickpea)
1 cup moong daal (split mung beans)
1 cup urad daal (split black gram)
1 1/2″ peeled and diced ginger
10 curry leaves
2-3 chopped green chillies (optional)
1/2 tsp baking soda
salt to taste
1/2 cup water (may be less)
vegetable or canola oil for frying
How to Make Daal Vadas
The first step to make this vadas is to soak all of the daal. You can soak them together in one bowl for 3 hours. Soaking chana daal, moong daal and urad daal will help soften it and it will be easier to blend it.
Next step is to wash and rinse the daal until the water runs clear. Once that is done drain off all the water from the daal mixture completely.
In a blender or mixer grind the daals to a thick batter. The trick is to grind the above mixture to a fine consistency with very little water possible.
Transfer this batter into a mixing bowl. Add chopped ginger, green chilies, curry leaves, baking soda and salt. Mix it thoroughly. Beat it well.
Set it aside for about 1/2 hour.
In a fryer or Kadhai heat oil. When the oil is hot drop spoonful of batter directly into the oil.
Fry them until golden brown. Remove and drain them on some paper towels.
Serve them hot with Fresh Coconut Chutney.
Mix Daal Vada - Chana Daal, Moong Daal and Urad Daal Vada
Ingredients
- 1 cup channa daal (split chickpea)
- 1 cup moong daal (split mung beans)
- 1 cup urad daal (split black gram)
- 1 1/2″ peeled and diced ginger
- 10 curry leaves
- 2-3 chopped green chillies (optional)
- 1/2 tsp baking soda
- salt to taste
- 1/2 cup water (may be less)
- vegetable or canola oil for frying
Instructions
- Soak the chana, moong and urad daal for 2-3 hours.
- Wash the lentils and drain the water completely.
- In a blender or mixer grind all the above daal to a fine paste/thick batter with little water at a time.
- The trick is to grind the above mixture to a fine consistency with very little water possible.
- Transfer this paste/batter into a mixing bowl. Add chopped ginger, green chillies, curry leaves, baking soda and salt. Mix it thoroughly.
- Set it aside for about 1/2 hour.
