As you know we ended up with 20 lbs of apples during our apple picking adventure couple of days back. To use up all those apples, I had an idea to make Apple Puri with classic apple pie ingredients. It would be an Indo-American fusion recipe. As an idea it felt great, however I was curious to see if it would be edible as well.
Fortunately my idea worked. The apple puri mixed in with all of the classic apple pie ingredients turned out great. Both my girls TEE and ‘S’ loved it and finished it all off.
Puri (also spelled poori) is a small deep fried, thin flat bread made with whole wheat flour (sometimes combined with all-purpose flour or semolina). It is very popular in the Indian cuisine and is made for breakfast, snack or other meals. It is paired with different varieties of curries and goes well with vegetarian dishes. Sometimes it is also paired with a sweet dessert Shrikhand (one of my favorite pairings). They is actually no right or wrong way to eat a puri as it is very versatile food.
So here is my recipe for Apple Puri with Apple Pie Ingredients. Enjoy!
Ingredients for apple pie mash:
3-4 large apples (a mix of sweet and tart)
1/2 cup brown sugar
1/2 tsp cinnamon powder
Ingredients for puri:
2 1/2 cups of all-purpose flour
2 tbsp of melted butter
a pinch of salt
Preparations:
- De-skin the apples. Cut it into four quarters and remove the center seeds. Grate these pieces of apples with a grater or food processor.
- In a pan combine the grated apples with brown sugar and cinnamon powder. Mix well and allow it to cook until all the liquid has been absorbed.
- In a mixing bowl combine all purpose flour, salt and 1 tbsp of melted butter. Mix it well.
- Add 1 cup of apple pie mash and mix it with the flour to make a dough. Finish the dough off by adding the remaining melted butter. Allow it to rest for 10 minutes.
- Heat oil in a kadhai or deep fryer.
- Break apart about 1 1/2″ small balls of dough. Roll them with sprinkled all-purpose flour on a flat surface. It should be 4 to 5″ round.
- Drop this one at a time into the deep fryer/kadhai. Fry until it is golden brown on both sides.
- Remove from oil and dry off on a paper towel.
- Eat it as is, or serve with some curry or bhaji.
Useful Suggestions:
- Make sure to use only 1 cup of apple pie mash for 2 1/2 cups of all-purpose flour. Do no add the extra apple pie mash. It will make the dough all sticky and unusable.
