What is Kulfi
Kulfi is a traditional Indian ice cream made with heavy cream, nuts, cardamom and sugar. It is rich in taste with a smooth and creamy texture. It is also denser and sweeter than regular ice creams. Kulfi is completely vegetarian, as no eggs are used to make it.
Variations of Kulfi
The basic ingredients of Kulfi remain the same; ie heavy cream, sugar and cardamom. However, you can make variations to this basic recipe by adding other ingredients to it such as mango, saffron, pistachios etc. Depending on the added ingredients you can make Mango Kulfi, Kesar (Saffron) Kulfi, Pista (Pistachio) Kulfi etc.
Mango Kulfi with Fresh Mangoes
This recipe for Mango Kulfi is a variation of the original Kulfi recipe. I particularly like this recipe because I have used fresh mangoes instead of canned mango pulp. Fresh ripe mangoes are available in India as well as US right now and will continue until the end of summer.
Using fresh mangoes for kulfi is perfect summertime dessert. It is one of my the favorite desserts and my girls love it too. I hope you ENJOY this recipe.
To make Mango Kulfi, you need only 4 basic ingredients. Garnishes are optional.
Ingredients for Mango Kulfi:
2 cups of Heavy cream.
2 cups fresh mango
1 can of condensed milk
1 1/2 tsp cardamom powder
1 tbsp chopped pistachios
Preparations:
- Blend the fresh mangoes to a pulp
- In a big mixing bowl add the mango pulp, heavy cream, condensed milk, cardamom powder, and mix properly.
- Pour it into a 9″ x 11″ baking pan and freeze it overnight or until it is firm.
- Garnish it with some more chopped pistachios.
- Slice it with a knife dipped in hot water and serve.
This recipe makes a huge batch of mango kulfi. That is one of the reasons I used a baking pan to set it. Traditionally kulfi is served in rectangular or round slices. However, the most distinctive shape of kulfi is a cone. See below some of the products you can use to achieve this cone-shaped kulfi.
