Guri Appa is a traditional Mangalorean breakfast recipe. It looks very similar to the Danish pancake ball, but the taste is different because the main ingredients are rice, coconut, jaggery, and fenugreek seeds.
Mangalore is a coastal town and as such most of the breakfast recipes include coconut and rice as main ingredients. Guri Appa is no different.
Throughout the state of Karnataka, you will find different versions of Guri Appa. The sweeter version is more popular in Mangalore, Udupi and surrounding cities. It is also known as Paddu and Guli Appa, depending on the language.
You can make Guri Appa either sweet or savory and it is made in a special pan called the Appa pan/Paniyaram pan/Appam pan.
The word Guri means pit or hole. The pan/griddle like you can see down below has circular pits and look very similar to the Danish Aebleskiver and the Japanese Takoyaki pan. To make appa, you can use either the non-stick or the traditional pan made with cast iron. You can find many such pans on Amazon.
Growing up, I did not like Guri Appa at all. I hated it when my mom made it. Never appreciated the amount of work it took to prepare this recipe, nor did I like its taste. However, my taste buds are more receptive and I have grown to love them. My husband and my girls like them too. ENJOY the recipe below.
Guri Appa | Guli Appa| Paddu – Mangalorean Recipe
Ingredients:
3 cups of Idli rice
1 packed tbsp fenugreek seeds
2 tsp urad daal
2 cups grated fresh coconut
2 cups jaggery (broken or powdered)
1 tsp salt
oil as required
Preparation:
- Soak rice, fenugreek seeds, and urad daal for 2 to 3 hours.
- Grind them to a fine batter and transfer it to a big mixing bowl.
- Add coconut, salt, jaggery to the rice batter and mix thoroughly.
- Add about 3 cups of water and mix it.
- Set it aside overnight to ferment.
- Heat the appa pan. Add some oil into each of the holes in the pan.
- Drop a spoonful of batter into each of the holes.
- Cover it with a lid.
- Remove lid and turn the appas over to cook on the other side.
- Cook appas for a minute on each side until golden brown.
- Repeat until all of the batter has been used up.
- Serve warm with tea.

In our house we all eat our appas differently. I like to dip in tea, my husband likes to eat it with coconut chutney and my girls love to eat it with maple syrup. So it works for all of us.
